Vegetarian Chili

1 large onion, chopped
1 large red bell pepper, diced
1 large yellow bell pepper, diced
3 cloves garlic, chopped
1 T vegetable oil

1 can corn, drained
2 cans Rotelle diced tomatoes with chilies
2 cans pinto beans, drained
2 cans black beans, drained
2-3 medium zucchini, cut into 1/2 inch cubes
1 small can of tomato sauce
1 envelope taco seasoning
*optional: jalapeƱos if you like it spicy

Heat oil in a large pot, add onion, bell peppers and garlic. Saute until tender. Add canned tomatoes, corn, and beans. Add zucchini, tomato sauce and taco seasoning mix. Cook on low-medium for 30 minutes, covered.
